THAI RED CURRY

   Ingredients
 
  1. 1 onion diced
  2. 3 cloves garlic diced
  3. 1 dst diced ginger
  4. 1 can coconut cream
  5. 1/2 cup finely chopped coriander stalks
  6. 1 dst sp anchovy sauce (or other fish sauce)
  7. 2 dst sp tomato paste
  8. 1 dst sp tahini paste
  9. 2 tbs tamari sauce (or soy)
  10. Juice from ½ lime
  11. ½ tsp salt
  12. Chili to taste
  13. Water 1-2 cups if cooking meat
 
 Method

  1. Saute onions until soft
  2. Add garlic & ginger. Cook 2 more minutes.
  3. If using fresh chili add now.
  4. Add all other ingredients (except water) and simmer lid on approx. ½ hour
  5. If adding meat I also add some water and cook for a further 1-2 hours (with drumsticks, pork shoulder pieces)
 
  
Note: Perfect with chicken, pork or seafood.
