THAI RED CURRY
Ingredients
Method
Note: Perfect with chicken, pork or seafood.
- 1 onion diced
- 3 cloves garlic diced
- 1 dst diced ginger
- 1 can coconut cream
- 1/2 cup finely chopped coriander stalks
- 1 dst sp anchovy sauce (or other fish sauce)
- 2 dst sp tomato paste
- 1 dst sp tahini paste
- 2 tbs tamari sauce (or soy)
- Juice from ½ lime
- ½ tsp salt
- Chili to taste
- Water 1-2 cups if cooking meat
Method
- Saute onions until soft
- Add garlic & ginger. Cook 2 more minutes.
- If using fresh chili add now.
- Add all other ingredients (except water) and simmer lid on approx. ½ hour
- If adding meat I also add some water and cook for a further 1-2 hours (with drumsticks, pork shoulder pieces)
