Red Dragon Pie

    Ingredients
 
  1. 400gms kidney beans (or aduki beans)
  2. 1 cup veggie stock
  3. 1 onion finely diced
  4. 2 large carrots diced
  5. 1 tbs tamari or soy sauce
  6. 2 tbs tomato paste
  7. ½ tbs dried oregano
  8. ½ tbs dried thyme
  9. 3 medium potatoes mashed
 
    Method

  1. Preheat oven to 180°
  2. Saute onions until soft
  3. Add diced carrots and cook a further 3 mins
  4. Place beans in food processor and pulse to break into pieces (or use fork).
  5. In a bowl mix all ingredients except potato
  6. Transfer to a baking dish and cover with mashed potato (I add butter and milk to the potatoes prior to spreading on top)
  7. Bake in the oven approx. 35 mins


Note: A simple vegetarian dish that’s filling and really rich and tasty. Can add chicken or mince if you wish. Freezes well.
