Vegetarian Variety

I promised Max that I'd make a lot more time to develop recipes for him once we returned from holidays. My parents kind of showed me up as although they are not really on board regarding his choice to be vegetarian (pescatarian actually as he eats seafood) they did a fabulous job of catering specifically to him. They came up with some marvelous takes on standard food like meatless "meatloaf" and veggie cottage pie. Some of them worked better than others but it was a kick for me! This week I have made time and it's been excellent as I have created 3 new winners. Often doing recipe development is a demoralising experience. Hours in the kitchen and many ingredients down with nothing appetising to show for it. However, I must have been smiled on this week as I have made some Cheesy Pumpkin Muffins that are joy and developed Cumin Pumpkin Patties that both boys fought over. The Red Dragon Pie from Monday was awesome and I even have some fudgy, brownie-esque Chocolate Muffins that I developed for a student that I want to hide in the cupboard and guzzle!!
