Rice Flour Pancakes with chicken
We love savoury pancakes. Add some left-over chicken, salad, corn and some sour cream. Boom, delicious lunch.

Roast Beef, Yorkshire Pud & Creamy Polenta
OK so the creamy polenta is a bit random but it was left-over from another night. Boys don't care as they like all offerings proffered :)
I know this doesn't look very appetising but it's hearty, filling and chock-full of flavour. It's also jam-packed with veggies and the boys are quite happy to have for lunch.
Roasted chickpeas added as we had a lot of sport planned for after school and a late dinner.

Stir Fry & Sweet & Sour Sauce
I love to challenge myself in the kitchen. I'm by no means a great cook so most of my recipes are fairly straight forward.
I'm also time-poor and work to a budget so this constrains choice a little.
However, I like to try new recipes to stave off boredom.
This week it was a home-made Sweet & Sour Sauce.
Sometimes my new ideas are a fail, mostly they are at least edible! This time, got great feedback from the peanut gallery. Yes! Win.
