I had some spare tomato based sauce so embarked on one of my food experiments! I created a "lasagne" but used layers of white beans/lentils instead of the pasta sheets. Still of course stuffed all my veggies in between, plus rich tomato sauce layers and a cheesy sauce made from cottage cheese, eggs etc.
I thought it was great. Max wasn't as enthusiastic but it wasn't a fail and he was happy enough to eat for lunch the next day. It was filling and chock-full of nutrients. I also made a big pan so froze a chunk to wheel out sometime in the future when time is short ...
