I'm not a big one for baking so this will seem like a real treat for them.
The flat ones with cheese are actually chick peas scones. I was testing a recipe from Elise at Fast Feasts. I loved that they were primarily made from chickpeas as I'm always searching for ways to increase nutrients in foods for my selective eating clients.
Chickpeas are a great source of protein and baked in a scone is a very palatable way to present them.
They went a bit flat but that's probably due to the fact that I never follow recipes properly! It also made them perfect as a "sandwich".
The muffin came from some home-made porridge that I added too much kefir to and it became bitter. Loathe to throw away I combined with ground linseeds/pumpkin/sunflower seeds plus egg etc. to create a nutrient dense muffin/cake thing!
Being a huge fan of rebranding food to create something desirable these both get huge ticks on that score!
