Yesterday is one of my "cooking" days where I have a bit more time to invest in the kitchen so do.
Making curry and a simple turmeric-based dahl is a great way to have food on hand for several meals.
I won't get any complaints either as all my boys love Indian. It's also the only way that my fussy middle-aged child will happily eat lentils (no logic there but ..)
Yesterday I threw as many drumsticks into the pan as I could fit and made a giant pot of dahl with a home-made chicken stock base. The whole thing, including the brown basmati rice took 45 minutes to prep (no curry pastes just spices).
I then left it to bubble for an hour whilst I did "stuff".
Added some spinach leaves - as my boys will tell you I serve spinach at every meal (not at all true) - because, well dark green leafies!
