Mayonnaise
Ingredients
1. 5 egg yolks
2. ¾ cup light olive oil
3. ½ tsp salt
4. 1 tsp Dijon mustard
5. 1 ½ tsp red wine vinegar
Method
1. Use a stick blender to whisk the egg yolks with the salt for approx. 1 minute (yolks will change colour slightly)
2. Gradually add the olive oil whilst continuing to whisk (mixture will thicken)
3. Add mustard and vinegar and combine
4. Refrigerate (the salt and vinegar act as preservatives)
Notes : Change it up by adding some garlic or herbs.
