GF Muesli Bars
Ingredients
- 1/2 cup puffed brown rice
- 1/4 cup quinoa flakes
- 1/4 cup flaked coconut
- 1/6 cup pepitas
- 1/6 cup sunflower seeds
- 1/2 tbs chia seeds
- 1/2 tbs linseeds
- 1/4 cup dried fruit
- 1/3 cup nut butter
- 1 tsp honey (add more to taste)
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1 tsp vanilla essence
- 1 tbs water (if necessary)
Method
- Mix the dry ingredients and spices
- Soften the nut butter and melt the honey
- Add to the mixture and combine well
- Add vanilla essence
- Taste and add more honey if you wish
- Some nut butters glue better than other’s so sometimes hot water is needed to bind
- Press mixture very firmly into a pan and push down
- Freeze until hard
- Cut into appropriate sized pieces
Note: Freeze well. Flexible as ingredients can be skipped/added.
