GF Muesli Bars

    Ingredients
 
  1. 1/2 cup puffed brown rice
  2. 1/4 cup quinoa flakes
  3. 1/4 cup flaked coconut
  4. 1/6 cup pepitas
  5. 1/6 cup sunflower seeds
  6. 1/2 tbs chia seeds
  7. 1/2 tbs linseeds
  8. 1/4 cup dried fruit
  9. 1/3 cup nut butter
  10. 1 tsp honey (add more to taste)
  11. 1/4 tsp nutmeg
  12. 1/4 tsp cinnamon
  13. 1 tsp vanilla essence
  14. 1 tbs water (if necessary)

     Method

  1. Mix the dry ingredients and spices
  2. Soften the nut butter and melt the honey
  3. Add to the mixture and combine well
  4. Add vanilla essence
  5. Taste and add more honey if you wish
  6. Some nut butters glue better than other’s so sometimes hot water is needed to bind
  7. Press mixture very firmly into a pan and push down
  8. Freeze until hard
  9. Cut into appropriate sized pieces  

Note:
Freeze well. Flexible as ingredients can be skipped/added.
