Crispy Zucchini Sticks

     Ingredients


  1. 1 medium zucchini
  2. ¼ tsp garlic powder
  3. 1/8 cup polenta (finely ground)
  4. 1/8 cup parmesan
  5. Black pepper
    6.  Olive oil

Method

  1. Heat oven to 180°
  2. Grease a baking tray
  3. Slice zucchini in half then into quarters
  4. Cut each quarter into 4 sticks
  5. Mix all the dry ingredients together
  6. Cover the zucchini in olive oil
  7. Roll the pale parts of the zucchini in the dry mix
  8. Place on greased tray, skin side down and bake 15 mins
  9. Fry zucchini for a few minutes on each of the pale sides to crisp spice rub

Notes : Serve immediately
