Crispy Zucchini Sticks
Ingredients
- 1 medium zucchini
- ¼ tsp garlic powder
- 1/8 cup polenta (finely ground)
- 1/8 cup parmesan
- Black pepper
Method
- Heat oven to 180°
- Grease a baking tray
- Slice zucchini in half then into quarters
- Cut each quarter into 4 sticks
- Mix all the dry ingredients together
- Cover the zucchini in olive oil
- Roll the pale parts of the zucchini in the dry mix
- Place on greased tray, skin side down and bake 15 mins
- Fry zucchini for a few minutes on each of the pale sides to crisp spice rub
