Cauli "Potato" Salad
Ingredients
- Half a cauli washed.
- 2-3 boiled eggs, chopped
- 2 tbs home-made mayonnaise
- 1 tbs mustard (I used Dijon)
- Salt & pepper
Method
- Separate the cauli florets and steam until cooked but not soft
- Cool and place in bowl
- Add mayo, mustard and salt & pepper and stir well
- Add chopped eggs and spring onion and mix carefully
Notes : Best eaten the same day
