Cauli "Potato" Salad

    Ingredients


  1. Half a cauli washed.
  2. 2-3 boiled eggs, chopped
  3. 2 tbs home-made mayonnaise
  4. 1 tbs mustard (I used Dijon)
  5. Salt & pepper
    6. 1 spring onion baton chopped finely





    Method


  1. Separate the cauli florets and steam until cooked but not soft
  2. Cool and place in bowl
  3. Add mayo, mustard and salt & pepper and stir well
  4. Add chopped eggs and spring onion and mix carefully


    Notes : Best eaten the same day
