The week before I went to a Women’s Business meeting with a shared lunch. I decided to prepare some chicken San Choy Bau in my gluten free coconut wraps. They all disappeared pretty quickly so I will take that as success. The boys were suitably delighted as they got them for dinner (Max had a prawn version) and then again for lunch the next day. Such a simple dish to prepare and if you make enough base it will serve multiple meals (always my aim). You can change it up by using lettuce as the outer part or use a wrap as I have. Inside can be chicken, pork, mince, prawns. Bean sprouts make it crunchy as do chopped peanuts. Add extra veggies for taste and texture.
