Toasted Muesli

No lunch post today as Joe has a sausage and potato wedges and Max fish and wedges. They are lucky boys!! Instead let's chat about breakfast. Now normally I'm pretty much one meal and everyone needs to eat the same thing (I'm a mother not a cafe). However, with breakfasts I've got a nice system happening that allows everyone their choice when we're all a little rushed and firing on partial cylinders. Joe and I love muesli so I make a giant pot every 10 days or so and we munch through that. Roy used to do the same but when he was in the UK he had some toasted muesli (granola) and loved it. So now he makes his own. Yes, part of making a choice outside the box is that you get to cook it too ... He takes our wholegrain oats and coats in oil (or butter) and then bakes in the oven in our large roasting tin for approx 1 hour.

About 20 mins before the end of the cook he adds some desiccated coconut to toast. Then 10 mins later he adds an obscene amount of roughly chopped nuts. See, one of the advantages of cooking for oneself is that you can go crazy on your favourite ingredients! Then once all the oats are brownish he adds pepitas, sunflower seeds and 4 people's quota of raisins.

Toasted muesli all finished and ready to store for the mornings. Have to admit it is really, really tasty!
Max on the other hand prefers porridge so I have rolling soaked oats ready in the fridge and just need to quickly cook a batch each morning. He is supposed to do this himself but we've traded chores as I find it's easy for me to cook them whilst I'm making lunches and who wants to sweep?!?!
Then we pour on our kefir milk on for a dose of great gut bacteria, but that's a whole other blog.
