So sad. Went to the markets yesterday and zucchini and eggplant are both now unacceptably priced. Sniff. So that's the end of them now until the start of next summer .... Shame as they are both such versatile veggies and quick cooking too which is a real bonus. I had one large eggplant and a few zucchini left so decided to do them pizza style. Always makes them that little bit more popular. Unfortunately short of both time and motivation so they only received half the normal treatment. Generally I would add some capsicum, onion and chopped spinach (and occasionally even olives) but these have only tomato paste, oregano and a little cheese.
