This is a family favourite. Brussels cut into slices, sliced & steamed broccoli, chopped feta and some green beans (added later).
I vary it dependent on what I have on hand. Sometimes I add tiny cubes of swede or beetroot and other times diced cauliflower.
This huge roasting tray will pretty much go in one sitting between the 4 of us. And that doesn't include the other veg I would be serving too!!
