This is so perfect on a lot of levels. We have just returned from 3 fabulous weeks in the UK, much of the time spent in Wales (national symbol is the red dragon). I had promised Max I would put a lot of focus on his vegetarian meals when we got back and a lovely friend sent me over this recipe. I cooked it yesterday (and did two versions, one with additional chicken to satisfy my husband). The "pie" was fabulous. Max thought it was amazing and ate a huge portion. It ticks all of my boxes. It's really quick and simple to prepare, it's economical and uses basic ingredients, it's nutritious and delicious and freezes well. Thanks Alison a winner in our house too!!
