I made some pastry using a combination of butter, tapioca and chick pea flour and it's not bad. I filled it with a mixture of sauteed veg, herbs and cheese (with of course the obligatory green leafies added). What's not to like about a pie?
The pancakes were another wheat alternative test. I used brown rice and tapioca flour and they were nice but thin like a crepe. Then this morning I experimented using a different "liquid" and they were fluffy and thick.
