Perfect Mayo

Oh what a bold statement that is. However, there is a story behind it. In our house we turfed the store-bought mayo many, many moons ago. Too processed, too many ingredients and often with added sugar. This was a much mourned change in our household. Roy and Max loved mayo (Joe was too young) and nothing I could make matched the glory of the store-bought. I came up with a version that I liked and the boys would eat but Roy wasn't interested and Max is reminded of the previous mayo each time we visit my parents (sigh .. but there are some battles worth fighting and others ....).
Until today. I am SO excited. I tested a recipe this morning and it is fabulous. It is even white! And in that bizarre trick of the taste buds the salt and acid tricks the mind into believing it's sugary. Want more convincing? .. although it contains raw egg it will keep for weeks.
Coleslaw tonight - yippee.
