Max was nagging me to re-make some cheese pies that I cobbled together for him a few weeks ago as I needed an alternative to the chicken I was doing for everyone else. He reckoned they were awesome and I got a rap over the knuckles Monday as they hadn't reappeared on the menu!
Tue I was busy so was going to chuck a roast chicken in the oven for us. Perfect for creating an impressive meal with little effort, plus provides ample leftovers for lunches. Only problem is Max as he doesn't eat meat. Enter a new experiment with a non-wheat based pastry. I literally had 10 minutes so thought I'd road test chick pea flour and butter bound with a little water. It was a bit sticky but aside from that rolled OK and baked OK. I filled with a leek/veggie saute mix, cheese and herbs and whacked a lid on. Apparently the pastry was too thick (sigh) and the filling "not the same" but aside from that got the tick.
Even better I cooked three so two went at dinner and the third was for lunch today in the thermos. I bulked it out with some of the Sesame Loaf that I had him bake last week (and I then sliced and froze especially for an occasion like this).
Do you get nagged for a meal that you made up on the spot and can't remember the recipe for?
