Pastry Mark 2 - Results

So yesterday I was road-testing a tapioca/coconut flour pastry. It was quite crumbly so it was never going to make a pie with a cover but I did get a passable tart shell happening. I had a bit of pastry left over so made a mini tart shell for Max (and sooo glad I did). Into the tart I put sauteed leeks and carrots, then a layer of chopped kale, some cooked chicken, some herbs and then poured chicken broth in. I topped it with cheese and oat bran mixed with a little cream and baked in the oven. I apologise for the photo "please don't eat until I've taken a photo" went totally unheeded ...
The tart was a big success for Joe, I really liked it and Roy loved the filling. But then again I could have told you he wouldn't like the crust and in part this is because he likes his traditional wheat based and anything beyond that doesn't get a chance (shhh, don't tell him I said that).
I filled Max's mini tart with the leek/carrot/kale combo and then added the cheese and herb topping. He LOVED it and asked was it healthy and if so could I cook it every day. Ah, any time I get 3 out of 4 I feel like my cook has not been wasted.
