Pastry Mark 2

 I made 2 fish pies for Max yesterday. One for the evening meal and one for lunch today. I used the brown rice flour pastry and, as I am mother of the year, even made some fish gravy. The pastry wasn't great. It wasn't horrible but it sadly wasn't a winner either. The inside rocked as did the gravy but the casing is not a repeat. So, like a dog with a bone I am on a mission to find another non-wheat pastry that is good. This time Roy & Joe are the guinea pigs - as they will find out tonight when they get their chicken, veg and gravy delivered in a tapioca/coconut shell. It was uber crumbly but the taste is, I reckon much better than the rice flour so let's see ....
Ah, the road of experimentation is fraught with near disasters ...
If you have already conquered the pastry battle please let me know. Only rule is it can't use a kilo of almond flour a) it is stupidly expensive and b) it offends my balance rule to inhale handfuls of nuts!
