Meat Pie with GF Crust & Veggie Mash
This pie came about as I was boiling bones for a beef stock. The bones were covered in meat and there was no way I could toss that.
So mixed the meat with some lentils and lots of sauteed veg for the filling.
Then wanted a GF crust (long story that I'll share at some point!) so tried chickpea flour/ butter / water. It was OK - not great - but OK!
Then topped with a mash made from cauliflower, sweet potato, parsnip, carrot, and a little cheese. Max declared it delicious!
All 3 boys snarfed the pie - which was good as I made 3 giant ones ....
