Non-wheat Bread

As you probably know I am very anti "cheap" wheat. I don't mind a bit of spelt here and there but am still always looking for alternatives as it fits into my balance philosophy. I have tested tonnes of "bread" recipes and this one gets the seal of approval from both boys (yippee). Even better it has no nuts or expensive ingredients (bar the psyllium), is really easy to make (no kneading or waiting) and is stuffed full of nutrients and fibre.
The boys were delighted as I baked it this morning and then we dashed off for a swim (hence the sunken top as I just left in the oven .. naughty ..). When we got home for a late lunch it sliced beautifully, was not at all crumbly and held really easily so they could butter and load up with toppings. I was happy as it is a great option as far as breads go as it is full of great nutrient dense ingredients and not a dodgy one in sight. The boys are already dreaming of toast in the morning (we tested and it toasts well) and sandwiches for school lunches ...
