Ooh, experimenting today - exciting for me, scary for the boys! I made some rice paper rolls with a cooking student on Mon (check out the photo below - he did an awesome job at 5!) which gave me an idea. I had some left-over Mexican. It was prawns with a tomato spicy sauce but not enough to send for lunch with rice etc. So I teamed with spinach, corn, sour cream and a little cheese and parceled it all up in rice paper. OK so it's totally mixing cuisines but I reckon the boys will love them. They both complained yesterday that they wanted more food so also threw in a random not quite sure .. think sweet potato brownie ... that I found in the freezer too. Fingers crossed they like them. Gut feeling is it will be a big thumbs up. Do you ever mix cuisines?
