I'm starting to improve on my vegetarian offerings for Max. Yesterday both boys had the day off school so were pressed into service. We made corn tortilla's, salsa, guacamole and of course some Mexican mince. For Max I made a mince version using capsicum, lots of spices and tempeh. Yum. This morning the boys have a recycled version with a little melted cheese and several layers of the tortilla/mince/sour cream/guacamole combo. Very happy campers!
