So as much as I love the winter root veg it also seems to take longer in the prep and the cooking.
Last night I cubed pumpkin, sweet potato, potato, parsnip and carrots and then roasted until soft and sweet. These were married with fish which we finished. However, I had marinated chicken wings left-over from earlier in the week so those went in the lunchboxes (which will cause no complaint).
Do you find winter veg more time-consuming in general?
