Thai red curry & noodles
Thai red curry is a favourite as it takes me 20 minutes to prepare from scratch, I can incorporate tonnes of veg and all 3 "boys" love it. As I was working from home I just whacked it in the oven and let it slow cook.
This one has 6 capsicums in (I have a glut), a whole bunch of spinach, a few onions, garlic, fresh ginger and a bunch of coriander including the stalks. It meant that adding some brown rice noodles and some stir fry broccoli and beans made for a full meal last night and easy lunches today.
Boys will be nicely stuffed and warm inside from the chilli on this rainy day ....
