Lettuce Wraps & Pumpkin Bread

I made San Choy Bau last night. Pork for us and prawn for Max. Iceberg lettuce is rubbish at this time of year and I'd found some awesome looking Cos at the markets so used that - which is of course more nutrient dense anyway. I added beansprouts (again a nutrient booster) and some chopped peanuts to give it crunch and texture. So this morning that's what the boys got in their lunchboxes. At the last minute I decided to heat the San Choy Bau filling and stuff that in the thermos. Means they will have to build them themselves at school so there may be complaints ...
I also gave them a piece of Pumpkin Bread each. New recipe I was testing and which they declared "one of the best flavours ever" and this from Max who is not a pumpkin fan! However, the texture was critiqued so I will try again tomorrow. Think I know how to fix it. They will never-the-less appreciate it in their lunchboxes and it's quite dense so nice and filling.
