Have a husband away on business which means I can cook vegetarian meals without the "where's the meat" drama!! Yesterday I wanted something easy, nutritious and packed with flavour so made a twist on a quiche. As Max is not eating meat I am upping his quota of iron-rich foods, hence the green leafies. The kale worked really well in this recipe as it doesn't go soggy and has a neutral flavour once cooked. Max loved the quiche and had seconds. Actually he's having thirds as it's also lunch for both of them today, alongside a piece of fish.
