I made a giant kumara (sweet potato based) quiche stuffed with loads of veggies the other night as I figured it would work well for a dinner then a few lunches. To make it more acceptable for my husband (who has his own parameters about protein) I put nitrate-free bacon in one side and cordoned it off from "Max's vegetarian side". So pleased to manage one cook which was both vegetarian and not!! The boys have a big chunk each for lunch today. Lovely and filling and nutrient dense. Tastes pretty awesome too!
