Thai Red Curry
I love it as it's pretty quick to prepare and I can make a big batch that easily does 2 meals and a lunch (maybe 2).
I serve with either brown basmati rice or brown rice noodles. Then a stir fry veg or an Asian coleslaw type-thingy! This time I went for non-heated, blanched broccoli and beans finely diced with carrot, red peppers and daikon. What's in the fridge determines what goes in.
I also make an Asian dressing to go with the salad and often have crushed nuts to sprinkle on top too.
