OK so this looks horrible and that's because it was a major fail in the kitchen. Plus my darling family, despite being told NOT to eat it as I wanted to take a photo merrily dived in anyway. I was attempting some sweet potato/chick pea /coriander and feta patties for Max as we were having Middle Eastern style lamb. However, I was rushed and stressed (yep, I know) and forgot to roast the sweet potatoes. Durh. Looked into the bowl and had all the ingredients ready to form into patties (including adding an egg) and then brain finally kicked in and I realised it was dry and was never going to form patties. Decided to roast all on a tray instead - hence baking the sweet potato, just with all the other ingredients as well. My husband (Mr Fussy) declared it fabulous and way better than patties and both boys tucked in. In fact it all disappeared in one meal (the patties would have done at least a lunch for Max as well). So an epic fail became a win, aside from the cook now needing to return to the well to conjure up an extra vegetarian meal .....
