To streamline this week's meals I baked up a giant tray of veggies yesterday. I diced them up, added some olive oil and balsamic vinegar and roasted until done.
These will appear at a few meals. Once as is, once with crumbled feta and another time perhaps with a cheese sauce.
Bulk cooking when I have time takes pressure off when I don't and gets me out of the "what's for dinner - AH - takeaways" trap. These veg will go well with a lot of what I have in my freezer such as lamb chops, a piece of salmon or some marinated chicken. Add some potato or rice or polenta and I have a complete meal with little fuss. Tonight I will steam broccoli, asparagus, peas and beans so I can add some extra rotating greenery too.
