Prawn & Potato Fritters
This has a leftover piece of a "healthier" cup cake that Max baked for his birthday party. Plus some prawn and potato fritters.
I love fritters as you can put pretty much anything into them. Here I wanted to use up two potatoes so married them with some herbs, some prawns and a bit of cheese and egg. Perfect as they have protein, carbs and even some veg. You can serve for dinner, as a side or of course in the thermos for lunch.
