For dinner I had roasted root veg from Mon night and was going to add beans and asparagus to that (both super quick to cook) plus a baby roast beef that I knew I could do in 30 mins as we like it rare.
As Max doesn't eat meat I needed some protein for him though. Gah ... what to cook. With 30 mins on the clock and time a'ticking the brainwave hit and I thought a quick cheese and spinach souffle. So greased a few souffle dishes (generally more likely being used to serve yoghurt than souffle's!) and whipped up a cheese, egg and veg mixture.
And, following one of my core mantras - cook once and serve thrice - I made a big batch. Perfect as it means today the boys can take them for lunch as well.
