Bit Left of Centre

Now admittedly I am still struggling a bit with the whole pescatarian thing for some meals. Eating as a vegetarian means scrapping the standard Western meal paradigm of meat, carbs & veg. It just doesn't work unless you can have an egg with every meal - which I'm not going to do. I'm getting much better at providing a varied and flavour-filled diet for Max however, yesterday I was super time-poor. I had also just received a shipment of free-range pork and wanted to roast a chunk. Fortunately I'd done a lot of extra veggies the night before knowing that I was going to struggle Thu. I threw the pork in before I started a cooking lesson and let that burble away. For Max I decided to go totally random and blitzed together a garlic loaf (new recipe I have borrowed and am busy perfecting). It uses rice flour and chia seeds and I was marrying this with a Hollandaise sauce (OK so there was egg on the side) which I was manically bringing together as dinner was being brought to the table ..
Max was actually really happy with the "bread" in lieu of pork with his roast veg and loved the eggy sauce. Which is excellent as guess what's for lunch today? With the addition of a boiled egg. Not sure how it'll be received but fairly confident he'll enjoy the change.
