I was cooking some sausages I got at the Food & Wine Show for the carnivores so wanted something "sausage-shaped" for Max too. Combined elements of two of the best vegetarian recipes I've cooked to date and came up with these Bean & Kumara/sweet potato Sausages. They're not the best looking food I've ever made (especially given the shape and colour - oops!) but they taste amazing and Joe was nagging to have some too. Both boys got them in their lunchboxes along with some mixed, roasted veg. The "sausages" could of course be made into patties instead.
