Meatloaf is one of my one-pot wonder dishes. Chock full of veggies and with added liver for nutrients.
The boys happily eat meatloaf. The night before I served it with a rich, tomato based sauce and then for lunch it's in a cheesy sauce that I made to go with the pie.
I often make a big batch of something (make once, serve thrice) and then dish it up in several different ways. It makes cooking less time-consuming whilst still providing variety. Meatloaf can also be a sandwich filler.
