A veritable feast. Bostock's organic chicken, sweet potato gnocchi and some mash. Add seasonal fruit, veg and lentil cookies and it should keep a boy fuelled for the day!
Lunchbox of Kings
I had some smoked salmon that I scored and the leftovers made it into the boy's lunchboxes along with quinoa pasta, lentil cookies (they are surprisingly nice) and chickpea scones :)
Chief Veggie Pusher
I have done my last veggie pushing stint at the local school. It was something I was instrumental in implementing a few years ago and is now a feature of all the sausage sizzles.
I prepare trays of raw veg and wander among the children offering them free veg (sponsored by the PTA).
For me it's excellent messaging - veg present at every meal - and often children will try new things like daikon when surrounded by peers also eating them.
I'm so excited that member's of the PTA will take on the role as I "retire" as chief "veggie pusher".
Mixed Veggie Tray
I haven't cooked this in ages but it was a cold day, I was short on time and ideas and suddenly this was at the forefront of my thinking.
The prep takes longer than I'd like but I start cooking things like the potato first and then add veg as they're finished. Carrot, pumpkin, sweet potato and parsnip.
It's a crowd pleaser and most of the tray disappears in a sitting!
The boys are eating more so I'm frantically trying to keep up with demand. Home-made muesli bars chock full of seeds and glued with linseeds and tahini are the latest attempt to keep the hungries at bay.
Sweet Potato Gnocchi
One of my lovely friends runs Pasta Addiction in Perth, WA and she posted a photo of her gnocchi. This brought back so many memories. Her mother-in-law made the gnocchi for the restaurant for many years and it was just divine!
My gnocchi is not divine, nor beautifully presented, nor traditional. However, the boys were delighted to have it served for dinner and I had to limit consumption so I had something for lunchboxes!!
