The positive thing is that it was almost gone :)
Zucchini is something myself and Roy enjoy, the boys not so much. We have now got Max onto the garlic/ fried incarnation but I am still always looking at ways to tick boxes.
This was stuffed with a little San Choy Bau pork mince I had left-over (and was wracking my brains as to what to do with) and as I was serving a pork roast it seemed like an OK fit.
I scooped out the flesh and roasted that separately - very nice in a little olive oil. Then replaced the spongy inside with pork mince and topped with cheese, roasting in the oven until tender.
The boys both said "it still tastes like zucchini" (to which I was dying to reply - "durh") but then they both scoffed huge pieces so I'll take it as a win.
Tonight I have a slightly new version in the works ... wish me luck ...
